After-Thanksgiving Day Pizza: The Dark Side

Another vegan pizza I am passionate about. After-T-Day meals are some of my favorite. Thanksgiving leftovers make bomb sandwiches, makes sense that they would make delicious pizzas too!

BUT, this is serious... this is pizza. It's a gamble. Sometimes it works, sometimes it doesn't. Pizza is a finnicky fine art, and some flavors are better than others. I think this one was good, but not better than the first After-T Day pizza I made and forgot to take pictures of, because I inhaled it pretty much immediately. I will post that recipes soon too. This is the Dark Side Pizza.

I like Namaste Foods blend of gluten-free flour for pizza crust because it's already seasoned with herbs and has a great Italian pizza scent and taste. I like to make my own vegan cheese, and will post the cheese recipe separately soon too.

The Build:

Gluten-free dough (of course), sweet potato mash (instead of sauce), then dollops of my cashew dill cheese, then sauteed brussels scattered around with sun dried tomatoes, some leftover soy curl "turkey," mushrooms and onions (mix left over from T-Day), and finished with sliced almonds.

The Ingredients:

1 1/2 cups Namaste Foods Pizza Crust Mix (or your favorite brand--I also like Bob's Red Mill, Arrowhead Mills, and Schar)

1 teaspoon vegetable oil (I used Safflower)

1 1/4 cups water

1/2 cup sweet potato mash

1/4 cup senntastic cashew dill cheese*

1/4 cup sauteed brussels mix

2-3 tablespoons soy curl turkey, chopped finely

1 tablespoon sun dried tomatoes, chopped finely

1 tablespoon sliced almonds, for finishing (optional)

The Instructions:

Preheat the oven to 450, and begin making the pizza dough. Grab a pizza pan or any lipped baking pan/sheet (make sure it has a tiny lipped edge), and spray with non-stick spray. I like Spectrum Naturals Coconut Spray. Combine 1 1/2 cups of the gluten-free flour with 1 tsp oil and 1 1/4 cups of water, and beat with either an electric mixer or with a whisk (using your strong arms). beat until it resembles cake batter, and there are no lumps. Scrape the batter onto the pan, about 14 inches wide/long and no more than about 1/4" thick. Bake for 20 minutes on lowest rack in oven. Then, take pizza crust out of oven.

Top the pizza with the sweet potato mash, then a few evenly placed dollops of cheese. Scatter the brussels and other vegs and soy curls all over the pizza, and place back in oven for another 10-15 minutes. Each oven will vary, so just pay attention, you don't want the crust to brown. If you like a crispier crust, after the first 20 mins of baking the crust, you can flip it, and then add toppings and bake til finished.

When you pull out the pizza after baking, scatter with sliced almonds, chili flakes, and other fun stuff you love on your pizza, and slice it up!
